Caribbean-Rub Chicken
Get fresh with your chicken breasts with this easy spice rub. TIP: Just before grilling, add the oil and orange juice to the spice blend and smear the rub on the chicken. The oil helps protect the chicken breasts from drying out, but you still need to be careful not to overcook them.
Serves 4
     
Ingredients:
4 boneless, skinless chicken breast
1 tablespoons ground cumin
1 tablespoons allspice
1 tablespoons ground ginger
1 tablespoons minced garlic
1/2 tablespoon salt, or to taste
1/2 tablespoon ground thyme
1/2 tablespoon chili powder or to taste
1 tablespoons vegetable oil
1 tablespoon freshly squeezed orange juice
Hot and Sweet Melon Salsa (see recipe below)
     
Preperation:
In a bowl, combine the cumin, allspice, ginger, garlic, salt, thyme and ancho or other chili powder and mix well. Set aside.

Cooking:
Preheat the grill. Oil the grill rack or cooking pan. Place the spice blend in a mini food processor with the processor running or in a bowl with a whisk add enough oil and orange juice to the spice mixture to form a thick sauce that is easily spreadable. Using either a brush or your hands smear the spice rub all over the chicken, being sure to cover the entire surface. Grill the chicken, turning as necessary, until cooked through, 7 to 9 minutes per side, depending on the thickness. Transfer to a platter and serve immediately with the Hot and Sweet Melon Salsa on the side.
     

Hot and Sweet Melon Salsa
     
Ingredients:
4 cups diced cantaloupe (about 1 large cantaloupe)
3/4 cup minced red onion
2 jalapeno chili peppers, seeded and minced
3 tablespoons minced fresh cilantro
Salt to taste
Juice from half a fresh lime (optional)

Preperation:
In a bowl, gently combine the cantaloupe, onion, jalapeno and cilantro and mix just until combined. Taste and, if desired, adjust the salt and lime juice accordingly.
