Caribbean Honey-Spiced Chicken with Mango
A finger lickin' variant on the YA YA Chicken recipe using the sweet summer flavour of fresh mangoes, with added hot chillies this becomes a seriously mean mother.
Serves 4

Ingredients:
4 boneless skinless chicken breasts
1/4 cup honey
2 teaspoons freshly grated lemon peel
1/4 cup fresh lemon juice
1 ripe mango, peeled, diced
1 small onion, peeled, quartered
2 fresh red chillies
2 teaspoons sweet smoked paprika
2 teaspoons vegetable oil
1 teaspoon garlic salt
1/2 teaspoon cinnamon
1/2 teaspoon freshly milled pepper
1/2 teaspoon ground allspice
1 tablespoon oil

Preperation:
Mix together the honey, lemon peel and juice in a bowl. Whisk until combined. Remove 1/4 cup of mixture to a food processor; set aside. Add the chopped mango to the bowl and gently coat in mixture. Put this in the refrigerator until you are ready for it. Add onion, chillies (halfed and de-seeded), paprika, oil, garlic salt, cinnamon, pepper and allspice to honey-lemon mixture in food processor container. Process until very finely chopped.

Cooking:
Spread mixture evenly over both sides of chicken breasts. Spread oil in a 13-by-9-inch baking pan. Arrange chicken breasts in pan. Bake at 375 degrees for 25-30 minutes or until cooked throughout. Remove chicken to serving platter; top with reserved mango.
