Ya Ya Chicken Yaya is the african word for rice, surprisingly this meal does not contain even the slightest hint of the stuff! However it is an unbelievably delicious meal, I read somewhere that Ya Ya Chicken and Gumbo Ya Ya are so named because they are so tasty the make you say YA YA!
Serves 4
Ingredients:
1 fresh chicken chopped into portions (or alt 4 medium breasts)
fat pinch of salt
1/2 tsp chili powder
1/2 tsp ground cayenne pepper
1/2 tsp sweet smoked paprika
1 tblsp margarine or butter
1 Large Red onion (can use standard onion)
1 large Red, yellow or orange bell pepper
2 Stems of celery
2 cloves garlic
1 fat tsp Fresh ginger
6 oz. Fresh orange juice
Grated peel from 1 orange
2 tblsp honey
1 tblsp Worcestershire sauce
Fiery hot pepper or chilli sauce (I like 4 nasty drops of Piri Piri sauce)
Preperation:
Preheat oven to 350 degrees.
Dissect the chicken and place in a greased baking dish. Next, mix the salt, cayenne pepper, chili powder and paprika on a small plate, sprinkle all over the chicken pieces evenly and let stand for a few minutes. Now you need to prepare the trinity (in cajun cooking the combined ingredients of onion, bell pepper and cellery is refered to as trinity). Chop up the bell pepper (discarding the seeds), onion and celery into small inch squared pieces. Finely chop the peeled ginger and garlic.
Cooking:
Melt the margerine in a large thick bottomed frying pan or skillet and sauté the trinity, after a minute add the garlic. Saute for a further 4 minutes or until its starting to look sweet. Add the ginger, orange juice and peel, honey, worcester sauce and hot pepper or chilli sauce and cook for about 5 minutes until sauce reduces slightly. Remove from heat and pour over the chicken. Cover the baking dish with tin foil and bake for an hour in the middle of the oven. After 30 minutes remove the foil and turn chicken over coating with the sauce. Return to oven and finish cooking.
Serving suggestions:
Serve with boiled brown rice or sweet potato mash and some fresh boiled greens. On a fiery tip you could serve with my cajun sweet potato wedges and tomato salsa with a green salad. |
