Wilson's 45rpm Stew
Ingredients:
1 lb. Lean Ground Beef
1 Can French Onion Soup
1 Can Golden Mushroom Soup
2 12oz V8 Spicy Vegetable Juice
1 Can Kidney Beans
2 Large Baking Potatoes
Small Can of sweet niblet corn
1/2 Bag of baby carrots
1 White Onion
2 cloves of garlic
Salt
Pepper
2 tablespoons Worchestshire Sauce
1 teaspoon Liquid Smoke
Preparation:
Clean but don't peel the potatoes. Dice them into about inch cubes and place in clean bowl, sprinkle with salt. Cut carrots in half and add to potatoes. Chop up 1/2 of the onion (less if you wish) and thinly slice the garlic, placing with potato/carrot mix. Combine the two cans of V8, Worchestchire sauce, Liquid smoke and pinch of pepper/salt.
Cooking:
Brown ground beef in the same pot you plan on cooking the stew in. Do not drain the juice. Reduce heat to about Med. Add cans of French onion and
Golden Mushroom soup, along with appropriate amounts of water (usually a can and a half per can). Cook for about 5-7 minutes. Add V8 concoction along with the rest of the carrots/onions/potato/garlic blend as well as the corn and the kidney beans. Let this simmer for a good 35-40 minutes, stirring occasionally. Do not allow boiling. Use the potatoes as a gauge for completion. Once they are tender (sticking w/a fork becomes easy), youre in for a treat. Add pepper/salt to taste. This pot will feed a lot of hungry record junkies. |
