Hot Tomato Salsa
I can't take credit for this simple masterpiece, this is pinched from my friend Jo. Ultra handy to know how to make this - I have bastardised it ever so slightly (sorry Jo). You will never be ripped off by a supermarket again having read this!
Serves Two
     
Ingredients:
1 small punnet of small ripe vine tomatoes or cherry tomatoes - any will do really, but these are what I prefer
Juice of 1 lime
1/4 of a medium sized red onion
1 large clove garlic
handful of fresh corriander leaves
1 hot red chilli
splash of chilli sauce
big fat pinch of soft brown sugar
small pinch of salt

Preperation:

Chop the tomatoes up into small chunks, (to give an idea of size I usually just quarter cherry tomatoes) do not mush them or liquidise them, stir in the finely chopped red onion, chilli and garlic. Next add the lime juice and chilli sauce, fold into the mix and season with the sugar and salt. give a good mix before adding the corriander leaves.

Serve!

Add more or less chillies or chilli sauce depending on how hot you like it - my suggestion is mild for non believers of the chilli.

Serve as a topping to burritos, tacos or as a side dish for chilli or whatever else, or up the ingredients and serve with some fresh nachos.
