Sweet Potato Mash
This is a great way to serve sweet potato, it compliments most dishes sweet or spicy dishes really well, its so easy to make and is a great change from the overplayed garlic mash. If you don't like ginger just leave that out of the recipe, also I sometimes forget about the corriander leaves and nothing is spoiled.
Serves 2

Ingredients:

13oz Sweet potato, peeled & chopped
2 tablespoons fresh shredded ginger
1oz Butter
1tblsp Honey
Milk
2 tblsp Fresh Corriander Leaves (no stalks)

Preperation & Cooking
Chop the sweet potato into 1" cubes and shred the ginger finely. Place both into a pan of boiling water and cook for about 7 minutes until the potato is tender. Drain the water away and mash the potato and ginger with the butter, honey and enough milk to make a smooth texture. Stir the fresh corriander leaves through the mash and serve with a main course.
